Selection of Irish Farmhouse Cheeses with Mango Chutney & Biscuits
Crozier Blue– Produced from the milk of a flock of sheep recently established on the limestone pasturelands near Cashel, Co. Tipperary. The cheese is made from pasteurized milk, vegetarian rennet and is available seasonally.
Cooleeney –Soft mould ripened cheese, with a beautiful creamy texture and a distinctive aftertaste. Cooleeney is produced on the Maher farm in the heart of Tipperary where the pastures are rich and are surrounded by damp boggy land an environment which allows the Mahers to produce Cooleeney which, when mature are creamy and oozing with the flavour of one of the finest cheeses.
Milleens – Soft, washed
rind cheese made from cow’s milk on the rugged Beara peninsula of South West Ireland. The complex and delicate cheese is made from the milk of Friesian cows grazing the mountains and pastures of the peninsula. Milleens is the longest established Irish farmhouse cheese.
Smoked Gubbeen – Surface ripened, semi
soft cheese with a delicate pink and white rind that is developed in curing rooms by daily washing and a lot of skilled care. The flavours are creamy with lots of mushroom and nutty aftertastes.
